ServSafe

Food safety continues to grow in importance throughout the food service industry. The University of Minnesota began the requirement of food managers certification in 1976. Several different educational formats have been used since 1976 for the University food manager to meet this requirement. When the state of Minnesota adopted the new Minnesota Food Code in 1997, one of the new items was food manager certification covering most all types of food service operations.

There are several types of educational programs available, but the principle one is ServSafe from the National Restaurant Association Educational Foundation. The Department of Environmental Health & Safety instructs the eigh-hour certification class and the four-hour recertification class.
